Prep: 5 minCook: 10 minMakes: 2 to 3 servings
Ingredients
- 12 oz (340 g) fresh oyster mushrooms
- 1 tablespoon neutral oil
- 3 tablespoons butter
- 4 cloves garlic, minced
- 4 sprigs fresh thyme
- 1 tablespoon lemon juice
- Flaky salt and black pepper
- Chopped parsley to finish
Instructions
- Tear the mushrooms into bite-size pieces along their natural lines. Wipe clean if needed; do not soak.
- Heat the oil in a wide skillet over medium-high heat. Add the mushrooms in a single layer, working in batches if needed.
- Cook undisturbed for 3 to 4 minutes until golden underneath, then stir and cook 2 minutes more.
- Lower the heat, add the butter, garlic and thyme, and cook for 1 minute until fragrant.
- Finish with lemon juice, salt, pepper and parsley. Serve over toast, pasta or rice.
Farmer's tip
Do not crowd the pan. Mushrooms release a lot of water, and giving them room is what lets them brown instead of steam.
